Organic Spring Vegetable Salad with Cous Cous

This dish goes well with roast lamb or chicken, alternatively it can be served with a solid flesh fish like tuna or salmon.

Ingredients

  • 1kg Pumpkin- peeled and diced into 2cm cubes
  • 500g Green beans
  • 1 Capsicum- diced into 5mm pieces
  • 12 Asparagus spears
  • ½ Bunch chopped coriander
  • 2 Red Onions- diced fine
  • 2 tsp Ground cumin
  • 2 tsp Ground coriander
  • 250g Cous cous
  • 2 tbs Olive oil
  • Salt and Pepper

Method

  1. Seal the Pumpkin pieces in a pan to caramelise before roasting then transfer to oven tray and roast in hot oven until tender.
  2. Grill asparagus spears on a hot griddle pan, turning regularly until lightly grilled.
  3. To prepare beans, top and tail ends. Then blanch in batches in boiling salted water for 30 seconds. Refresh in cold water or iced water.
  4. Cook the cous cous according to packet instructions, adding olive oil and salt to water and mix well.
  5. Place all ingredients in a large bowl and mix well. Season to taste and garnish with extra coriander leaves.

Traditional Energy Boosting Tonic You Can Make At Home

Chinese Chicken and Corn Soup

This traditional Tonic of the East is fantastic when a cold or flu is on it’s way. It is also fantastic as a circulation booster if you suffer from cold hands and feet because it contains ginger & onion, which stimulates the circulatory system. Chicken increases strength and vitality and corn is nourishing for the whole system.

When you are suffering from Period Pain, epecially in the winter months, this soup, as theinfamous book title says, is “Chicken Soup For the Soul”.

Naturopathically speaking,  nourishing food is the best medicine of all!

The best thing is that it is QUICK and EASY to make!

Ingredients:

  • 1.5 litres of chicken stock (you can either cook the chicken carcass for a couple of hours or use the Massel chicken stock powder. Massel seems to be the only stock powder that doesn’t contain MSG (621).
  • 300g of fresh or tinned sweetcorn (Coles now stock organic tinned corn)
  • 2.5 cm of fresh ginger, grated
  • 300g shredded chicken, cooked
  • 6-8 spring onions, sliced finely
  • 1/2 teaspoon of seseme oil (this really makes it!!)
  • Freshly ground pepper and salt
  • Chopped corriander to garnish
  • (Optional) 2 Egg whites

Method:

Heat the stock for a few minutes in a medium saucepan, then add the sweetcorn, ginger and chicken. Bring to the boil. Optional- you can add 2 egg whites in. They will cook straight away with the heat. Try to drizzle them in so that they are in strands.  Then reduce the heat and simmer for 5 minutes. Add the spring onions and sesame oil and season to taste. Cook for a few minutes, then service garnished with corriander.

Serves 6.

How to Make Hommous

Hommous is really easy to make & it tastes great! It can be used as a dip or with falafel.

Ingredients:
Chickpeas, preferably organic. You can use either a can or soak chickpeas over night.
Lemon jiuce, of one lemon
Tahini (hulled sesame seeds), 1-2 tbs. You can buy this in the health food section of the supermarket.
Salt and Pepper to taste

Method:
Rinse canned or soaked chickpeas and let drain. In a blender add lemon jiuce, tahini, chickpeas and salt and pepper and wizz until it makes a dip consistency. A small amount of water can be added if it is too dry.
